Clean Eating for Busy Moms; 8 Slow Cooker Recipes

I Love my Slow Cooker!

As a busy mom, I LOVE my slow cooker (AKA crock pot).  Do you love yours as much as I love mine? Or, have you NEVER used one and looking for some easy slow cooker recipes to try? I am going to share some with you.

Slow cookers are a time-saving kitchen tool that can make even the most crazy day feel like a total success. For most slow cooker recipes, you simply add a few ingredients into a crock pot, add liquid, push a button, and then – here’s the BEST PART – do anything else you please for several hours (work, errands, workout, playdates, etc)! When you finally saunter back into the kitchen and lift the lid off the cooker, your house will smell like you’ve been salving in the kitchen all day (this yummy smell drives my dog crazy all day) and you’ll have an incredible meal that’s ready to serve. For me, Tuesdays are ALWAYS slow cooker days. I am usually go, go, go all day, and then after school, we have cheer practice at Power Cheer! All-Stars until 7:30pm, so we usually don’t get home until around 8pm. Being able to walk in the door, have dinner ready for us, really helps and saves time for showers and before bed book time!

Busy Moms Bonus: when you’re done, there’s just one pot to clean.

Meals cooked in slow-cookers tend to be hearty and comforting, and they render even the toughest, least expensive cuts of meat (I dont’t eat meat, but my husband does, so I still cook it) melt-in-your-mouth tender. A single recipe can make so many servings that you’ll have meals for days and leftovers to freeze for busy weeknights in the future. Use these tips to help keep those leftovers from spoiling.

Here are the recipes I am sharing with you today:

  • Easy Chickpea Curry
  • Beef Chili
  • Re-fried Beans
  • Cheesy Chicken Enchiladas
  • Chicken and Quinoa with Spring Vegetables
  • Beans and Rice
  • Chicken Fajitas
  • Turkey Meatballs

BONUS!

  • Banana Bread Oatmeal (pictured above)
  • Baked Apples
