Slow Cooker Easy Chickpea Curry
Let your slow cooker do the work of dinner tonight. This high-protein dinner (also vegan) is rich in flavor and best served over basmati rice. I used organic brown basmati rice, and made it in my microwave rice cooker. Also, I added some diced fresh carrots to the recipe to change it up, and it was STILL yummy! Hope you enjoy this as much as I have.
- 2 onions, diced
- 4 cloves garlic, minced
- 1 pinch ginger, minced
- 2 (15oz) cans chickpeas
- 1 (15oz) can diced tomatoes
- 1 (15oz) can coconut milk
- 1-2 Tbsp curry powder
- Salt, to taste
- 1/2 bunch cilantro
- Basmati rice, to preference amount
Combine all ingredients other than cilantro in slow cooker. Cook on low for 6 to 8 hours.
Once finished stir in cilantro. Serve over basmati rice.
