Cauliflower Fried Rice
This recipe is very easy, and so good! I made it yesterday, and had the leftovers today. I bought the bag of cauliflower rice from Super Target, in the produce section, and the recipe was on the back of the bag. I did swap out and also add ingredients, but overall, super easy and very healthy!
- 1tbsp olive oil
- 1/2c onion, diced
- 1/2c carrots, diced or shredded
- 1clove garlic, minced
- 1bag eat smart cauliflower rice (2.5 cups)
- 1/2c peas, fresh or frozen
- 1-2tbsp soy sauce (or braggs liquid aminos)
- optional 1 egg, slightly beaten
- salt & pepper (to taste)
Heat the oil in large non-stick pan/skillet. Add onion, carrot, and garlic. Saute on medium heat for 2 minutes. Add the bag of rice, peas, and soy sauce. Saute for additional 2 minutes until the cauliflower rice is heated through. Spoon mixture to one side of pan. Raise heat and pour egg into the empty side of the pan. Scramble egg until cooked through. Mix all ingredients & season to taste.
Variation: For added protein, add tofu, or grilled chicken, garnish with scallions.
